Can removing a head shim (comes with 2 ) hurt the motor or can itl gain any compression, my mac .28 has about 6-7 gallons on it and is about gone! And a few guys at my track says it will help out for alittle while longer ?

It will raise the compresion some, just take off the thinner one and make sure retune the engine.
